It's hard to find a greater fan of bread and local food in Quebec than Charles Létang, owner of the bakery Du pain… c’est tout !, located in Saint-Roch-des-Aulnaies. A baker for ten years, Charles has worked with natural sourdough and local organic flour that he buys directly from farmers in the region. These flours are then stone-ground at La Seigneurie des Aulnaies, just behind its bakery.
